Tomatoes with Dill and Feta Cheese
This recipe for fresh garden tomatoes with dill and feta cheese
is a delicious variation on plain tomato wedges. It uses a fresh dressing made
from diced feta cheese and plain yogurt that is also great on
other fresh vegetables such as sliced cucumbers.
Ingredients
3 large, ripe tomatoes, cut into wedges
1 head of lettuce
1 cup diced feta cheese
1/2 cup plain yogurt
1/2 cup milk
1 tablespoon fresh dill, minced
Dill sprigs for garnish
Directions

In a mixing bowl blend together cheese, milk, yogurt, and minced dill
until mixture is smooth then refrigerate.

Wash and drain crisp lettuce leaves. Arrange tomato wedges on leaves.

Pour yogurt dressing over tomatoes and garnish with dill sprigs.

The dressing will keep under refrigeration for two to three days and is
also delicious over other sliced, fresh vegetables such as cucumbers,
snow peas, and bell peppers.
