Tomato Recipes

Here are some of my favorite tomato recipes. You can't beat the taste of a garden tomato fresh and warm picked right off the vine with a a little salt, but you'll enjoy the variety of flavors these recipes bring to the table, too.

Many gardeners feel that growing tomatoes is just the first step in a process of capturing the rich flavor of tomatoes. There are so many delicious ways to prepare tomatoes, from casseroles, to frying, to fresh salsas.

Here are a few suggestions to keep in mind when cooking with tomatoes:

One pound of tomatoes equates to about two large, three medium, or four small tomatoes
For best flavor, store ripe tomatoes at 60˚F. Tomatoes lose flavor when refrigerated for any length of time
To peel a tomato
- immerse in near-boiling water for 30 to 60 seconds
- immediately place in ice water until tomatoes have cooled
- slip off peel with help from a serrated knife
