Country Scalloped Tomatoes

This old recipe for country scalloped tomatoes makes a delicious side dish.

1/4 cup chopped onion
6 medium tomatoes, peeled and sliced
1/4 cup chopped green pepper
1/4 cup butter
1/2 teaspoon salt
1/4 teaspoon pepper
1/2 tablespoon sugar
1-1/2 cups toasted bread crumbs
1/8 teaspoon basil leaves (optional)

  1. Cook onions and green pepper in butter until soft.
  2. Place half of the tomatoes in a 2-quart casserole.
  3. Top with half of the seasonings and bread cubes.
  4. Add all of the green pepper mixture.
  5. Add the remaining tomatoes, seasonings, and bread crumbs.
  6. Bake in a 350˚F oven for 30 minutes. Serves 6.
