Country Scalloped Tomatoes
This old recipe for country scalloped tomatoes makes a delicious side dish.
1/4 cup chopped onion
6 medium tomatoes, peeled and sliced
1/4 cup chopped green pepper
1/4 cup butter
1/2 teaspoon salt
1/4 teaspoon pepper
1/2 tablespoon sugar
1-1/2 cups toasted bread crumbs
1/8 teaspoon basil leaves (optional)
Cook onions and green pepper in butter until soft.
Place half of the tomatoes in a 2-quart casserole.
Top with half of the seasonings and bread cubes.
Add all of the green pepper mixture.
Add the remaining tomatoes, seasonings, and bread crumbs.
Bake in a 350˚F oven for 30 minutes. Serves 6.
