Sautéed Cherry Tomatoes Recipe
This tasty side dish recipe for sautéed cherry tomatoes brings out the
natural sweetness of the tomatoes, while
shallots give the dish an interesting garlic-onion bite. Once the tomato skins burst,
they're ready to serve. Grape tomatoes can also be used in this recipe.
Ingredients
4 tablespoons butter
2 shallots, finely chopped
4 scallions, including some of the tops, finely chopped
1/2 teaspoon salt
1 teaspoon dried dill weed
3 cups cherry or grape tomatoes
2 tablespoons finely chopped fresh parsley
Directions

Over low heat, melt the butter in a heavy skillet.

Add the shallots, scallions, parsley, dill weed, and salt and
sauté 4- to 5-minutes over low heat or until tender.

Add the cherry tomatoes to the skillet, stirring gently,
and cook for 5-minutes
or until a few of the tomato skins burst.

The tomatoes should be well-covered with the vegetable mixture.
Serve immediately.
